Winter Warmer: Beetroot and Apple Soup. 

I don’t know about you, but it’s rather chilly, frosty and currently a little snowey where I am. This sort of weather makes you want hot, warming meals but that doesn’t mean you have to fall away from your diet! 

My beetroot and apple soup recipe will warm you right up, whilst giving you all of the goodness you need to achieve your health and fitness goals. 

  
Unless you’ve been living under a rock, you probably know that beetroot is incredibly good for you. Known as a ‘superfood’ beets contain copious amounts of vitamins and antioxidants, whilst being really low in fat. The deep red vegetable is packed full of iron, vitamins A & C, fibre, folic acid, manganese and potassium, making it a great addition to your diet. 

  
It can be an ‘acquired’ taste, but I’m sure you’ll love this sweet and savoury take on a superfood soup to keep you warm and healthy in this cool weather. Give it a go. 

What you’ll need.                                     1kg beetroot (cooked or raw but not pickled/in vinegar)                       2 apples peeled and finely chopped   1 whole chopped onion                       800ml vegetable stock (2 cubes)       2 tsp dried thyme                                     1tsp dried cumin                                       1.5tsp unsalted butter (or alternative)                                             Natural yoghurt to serve 

Method.                                                     Chop up your beetroot and lay in a baking tray. Coat with the thyme and cumin and place in the oven for 15 minutes (if pre-cooked) or 45 minutes if raw. 

  
Meanwhile, add the butter and chopped onion to a large pan and sauté for 10 minutes. Next, add the chopped apple and sauté for a further 5 minutes until soft. By now your beetroot should be ready to stir in, along with your stock. Once all of the ingredients are added together, simmer for 10-15 minutes. 

  
Blitz your soup in your choice of blender (I use my nutribullet) and serve with a dollop of natural yoghurt and enjoy.

Goodbye, July. My July Top Picks. 

Perhaps this post is a couple of days late, but I thought I’d do a little post detailing some of the things I’ve loved this July. As I’ve celebrated my 21st birthday, I’ve had lots of nice treats to try out! Here’s my top picks. 

1) Australasia – Spinningfields. 

  

On my 21st, after my graduation ceremony (busy day!) we headed to Australasia in Spinningfields, Manchester. I’ve been before to this Asian Fusion restaurant and it never fails to impress me with the food, drinks and decor. It feels super exclusive heading downstairs and the selection of sushi, delicious dishes and cocktails are exceptional. Make sure you try the chocolate dome! 

2) All things Elemis. 

  

I’ve been loving the Papaya Enzyme Peel, Exotic Moisture Mask and Skin Bliss Capsules that I picked up on my spa weekend. I suffer from dry skin so these are all really hydrating and are keeping my skin glowing. 

3) Nutribullet. 

  

I’ve mentioned previously that I’ve used this every single day since I got it! I’ve been enjoying making new recipes up with different fruits and leafy greens – I would totally recommend this for any health-lovers like me! 

4) WheyHey Protein Ice Cream. 

  

On the rare sunny days in England, it’s nice to have grab a frozen treat and WheyHey offer an amaaaaazing guilt free one. One 150ml tub contains 20g protein and tastes delicious! I picked these up from the wholesalers and I’m loving how silky they’re keeping my hair. I always like to spend a little more on good hair products, with having bleach on my locks. You can snap some up online Here.

7) Muji Aroma Diffuser. 

  

This is one of the many gorgeous gifts I received from my lovely boyfriend, after he’s noticed me lusting after them in selfridges for ages. I adore things like this and always have scented candles and oil burners on so this is perfect for me as it vapour uses water and essential oils and produces a scented must that fills the house. Breakfast Smoothie Recipe

Good morning! 

I’ve recently celebrated my 21st birthday and one of the most useful gifts I received (from my sisters) is a NutriBullet! I’ve been dying for one of these for ages and I’ve actually used it every single day since I’ve had it! I’m preparing hard for Miss Scuba UK now so a smoothie makes a great breakfast to help get my body in the best shape, and also the vitamin rich ingredients can encourage glowing skin and healthy hair and nails. 

I like to start my day with a good wholesome breakfast to keep me going through busy days so this smoothie recipe is perfect for keeping me full and giving me energy, whilst tasting amazing! 

Ingredients           

  • 1 whole medium banana           
  • 1 generous handful of frozen berries
  • 1 sachet of porridge oats (27g)
  • Unsweetened almond milk                                

I just threw the ingredients into the cup and blended well for about 30-40 seconds. The amount of almond milk you use is dependent on the consistency you like. I like mine thick so I didn’t go all the way up to the Max Line. 

I have put together a rough guideline for the nutritional values:

  • Calories – 250 
  • Protein – 5.1g
  • Total fat – 4.7g
  • Saturated fat – 0.6g
  • Carbohydrates – 43g
  • Fibre – 6g
